POPULAR DELICACIES
La Paz Batchoy - The most popular dish in iloilo. You can find it anywhere in the Philippines but the best La Paz Batchoy is in Iloilo. It was first originated at Lapaz, Iloilo city. The dish was first made in the La Paz market in 1938 by Federico Guillergan. Sr. And since then it has evolved and now it's very popular. The dish consist of broth, noodles, beef and pork.
Pancit Molo - This dish is soupy not like any ordinary pancit we know and it uses a wonton wrappers (made from rice flour) instead of long, thin noodles. It is an adaptation of wonton. And in Molo, Iloilo this is their specialty.
Biscocho- A twice-baked bread, spread with butter and sugar. It's very sweet and is addicting. You can find it in Biscocho Haus or Biscocho de Cana but it's less sweet and no butter.
OLD WORLD DELICACIES
Pinasugbo - Apparently most of their meriendas are sweet and popular like pinasugbo. It's very well loved by the children because of it's sweetness. Pinasugbo is a thinly sliced banana that is deep fried and dip into dark caramel and sprinkled with sesame seeds. This is not crunchy, it's more like chewy.
Barquillos - it's known in iloilo and is found in most of the pasalubong's store in iloilo. If you're finding a pasalubong or "take home" then you should buy this because it's very delicious and sweet. It's ingredients are milk, sugar, flour, eggs, butter, vanilla, cooking oil and water. So better watch out for those who our allergic to dairies.
NATIVE DELICACIES
Baye-Baye - is an ilonggo native snack and it is very popular for the kids because of it's sweetness. It's best to eat it with coffee or sodas. This native snack is the specialty of Pavia, Iloilo.
Ibus - one of the best delicacies in Iloilo. It's well known throughout the western visayas. Ibus is a sticky rice mixed with coconut milk and sugar, it is wrapped with a coconut leaf.
Dried Mangoes - Guimaras is known for producing one of the sweetest mangoes in the world. Dried mangoes is one of the best delicacies in iloilo. It's ripened and has the sweetest taste. The Manggahan Festival is celebrated every April and this is the time where most of mangoes are produced.
Dried Fish - like "tuyo"and "danggit", it's very popular throughout the country especially in Iloilo. Since this is what filipinos eat for breakfast. Dried fish is salty and some people don't like the taste but it's still very popular.
